Forgive the ignorance but does anyone have a full reference for where the Bradbury quote 'Living at risk is jumping off the cliff and building your wings on the way down' is from?

All I can say is Ray happens on a metaphor he likes, that works for him, and then repeats it. You'll find variations of the same quote more than once. Can't help you on a source for this one.

It's from Ray's introduction to: "The Stories of Ray Bradbury" (Knopf, 1980).
